  1. Heat a large skillet on medium high heat, add oil. Once the oil is hot, add the cubed squash and a good pinch of salt. Cook, stirring frequently, till the squash is lightly browned and a little tender, about 10-12 minutes.
  2. Add the thyme, rosemary, chili flakes, brown sugar, and give it a good stir. Cook the squash for another 10 minutes or till its tender. Add the kale and cook till it is wilted. Season with salt and pepper. Taste and adjust seasonings to your liking.
  3. Sprinkle with feta cheese and serve.
Recipe Notes

Start with 1 tbsp. of olive oil and if you find while cooking the butternut squash is getting a bit dry add a little more olive oil.
