  1. The Cake:
  2. Pre-heat oven to 350 degrees. Butter a 10inch cake pan.
  3. Add 1 cup of all-purpose flour, 1.5 teaspoons of baking powder, and 2 pinches of salt to a large mixing bowl and stir together until everything is well combined
  4. Separate 6 egg yolks and egg whites into two separate medium sized bowls.
  5. Add 1/4 cup of sugar into the bowl containing the egg yolks. Use an electric mixer on a medium to high setting to beat the yolks until pale and double in volume.
  6. Add 1/3 cup of whole milk and 1.5 teaspoons of vanilla extract to the bowl containing the beaten yolks and gently stir together just to mix all the ingredients.
  7. Gently pour the egg yolk mixture into the large bowl containing the flour mixture.
  8. Slowly stir the mixture together until evenly mixed. Try to smooth out as many flour lumps as possible.
  9. Use the high setting on the electric mixer to whip the egg whites until you see soft peaks.
  10. Add 1/4 cup of sugar to the egg whites and continue beating on high until stiff peaks.
  11. Gently and gradually fold the egg whites into the large bowl containing the rest of the ingredients.
  12. Pour this mixture into the pan.
  13. Bake for 40-45 minutes.
  14. Use a toothpick insert it in the middle of the cake, if it comes out clean the cake is done.
  15. Tres Leches (3 milks):
  16. Let the cake cool to room temperature (about 30-45 minutes)
  17. Use a fork to completely pierce the top surface of the cake. Don’t worry, you can cover up these wholes with icing later.
  18. Add 12 Oz evaporated milk, 14 Oz sweetened condensed milk and 1 cup half and half to a large pitcher and stir together until evenly mixed.
  19. Slowly pour the Tres Leches onto the cake allowing it to absorb as you pour.
  20. Set the cake aside allowing it to fully absorb the Tres Leches (about 30 minutes).
  21. Icing:
  22. Pour 2 cups of heavy cream and 1 cup of sugar into a large bowl and mix together using an electric mixer until you see stiff peaks.
  23. Add 1.5 teaspoons of vanilla extract to this mixture and gently stir it in until evenly mixed.
  24. Spread the icing generously all over the cake. Top the tres leches with your favorite fruits or dust with coco powder. Enjoy!
